I am looking to buy a touring bike (incidentally also my first big bike). So far I have been very interested in the Honda Deauville and Triumph Sprint. As I'm on a bit of a budget I have been looking at the older models, as they are more affordable. The issue is that these bikes generally have a lot of miles on the clock. At what point is too many miles a definite no no? I realise service and maintenance play a factor but is it advisable to consider a bike with more than 40,000 miles. What are other areas of concern on older models?

common sense tourer to me with shaft drive.
You should find one lower than 40,000 and newer.
